In the later 1970s, the microbiological landscape of food infections began to change, with Salmonella being displaced by Campylobacter as the principal causal organism. This chapter explores the changing landscape of food-borne disease in the later twentieth century. The chapter shows how old problems of personal hygiene, food preparation practices, and food fraud persist into the present, and outlines recent pathogenic developments such as the proliferation of multi-drug-resistant strains and the emergence of a number of new ecological niches which indicate that the global struggle against food-borne disease will continue. In this landscape, Salmonella continues to occupy an important place.
